For the stew:
1/2 red onion diced
1 whole red pepper diced
4 chicken sausages cut into cubes
1 garlic clove/tsp lazy garlic
Tsp mild chilli powder
½ tsp smoked paprika
½ tsp cumin
1 Tin chopped tomatoes
2 handfuls spinach
Serve with:
1 slice Nimble bread
1 egg
1 big pan
Step 1: Fry onion, peppers, garlic, & sausage until sausages brown
Step 2: Add tsp mild chilli powder, 1/2 tsp smoked paprika, 1/2 tsp cumin, fry for another minute
Step 3: Add tin chopped tomatoes, at this point put your eggs on to poach
Step 4: Bring stew to simmer and leave for 5-6 mins
Step 5: Add in spinach to taste until wilted and put bread on to toast
Step 6: Serve stew, toast & egg.
