30g vanilla protein powder
1 tbsp coconut flour
120g egg whites
1/2 tsp baking powder
Fry light cooking spray
Topping ideas:
- Warmed up frozen berries with fat free yoghurt
- Nut butter
- Zero calorie syrups (our favourite is Skinny Food Co golden syrup!)

Blender
Step 1: Blend all ingredients until a thick batter is formed
Step 2: Spray a pan with low cal cooking spray (eg fry light) & put on medium heat
Step 3: Pour in pancake mix (split into desired number for stack). Flip when mix is no longer runny on top
Step 4: Remove from pan and assemble how you like
Step 5: Top with berries, yoghurt, calorie free syrups… you do you! (toppings not included in calories/macros)
